Coffee from Colombia
Colombia grows more washed arabica than any country on earth, and because different regions harvest at opposite ends of the year, it is the one origin that is genuinely in season all year round.
The growing regions run the length of three Andean ranges, which is why the harvest never really stops: Huila and Tolima peak around the middle of the year, Nariño and Cauca later, the northern departments earlier. For a roaster this makes Colombia the reliable spine of a rotating menu.
The classic profile is caramel sweetness, red apple and a clean citric acidity — approachable enough that Colombia is where most people's specialty habit begins. The top end is nothing like that. Growers in Huila and Nariño have spent a decade on Pink Bourbon, Gesha, Wush Wush and long anaerobic fermentations, and those lots now compete with anything in the world on price and on the cupping table.
Most Colombian coffee still comes from smallholdings of a couple of hectares, processed by the family that grew it on a patio behind the house.
