Pink Bourbon coffee
Pink Bourbon ripens to a pink cherry rather than red or yellow, comes almost entirely from Huila in Colombia, and — despite the name — is probably not a Bourbon at all.
Genetic work published in recent years places it closer to Ethiopian landrace material than to the Bourbon lineage, which would make the name a historical accident rather than a description. Producers in Huila have kept it regardless, because the cup is exceptional.
Expect intense florals, tropical fruit and a tea-like body — closer to an Ethiopian natural than to anything else grown in Colombia, and priced accordingly.
