Castillo coffee
Castillo is Colombia's rust-resistant workhorse, released by Cenicafé in 2005, dismissed for a decade as a variety that could not cup well, and since proven otherwise.
It descends from the Timor hybrid, which carries robusta genetics for disease resistance — the reason it was assumed to be a compromise. Blind cupping studies and, more persuasively, a run of high-scoring competition lots have shown that well-grown Castillo is competitive with Caturra.
It now covers a large share of Colombian planting, and a great deal of excellent Colombian coffee is Castillo whether or not the bag says so.
